Oat Bars

These oat bars are delicious and easy to make!
You can eat them as a snack, for breakfast, and/or dessert. They are full of healthy fats and low in sugar. Any time I bring these to a potluck, I get asked for the recipe!
Oat Bars
INGREDIENTS:
1 cup melted coconut oil, slightly cooled
4 eggs
1/2 cup 100% maple syrup
2 teaspoons pure vanilla
2 cups almond flour
2 1/2 cups rolled oats
2 teaspoons baking soda
1 teaspoon cinnamon
1 teaspoon sea salt
1 tablespoon flax seeds
Optional:
2 scoops unflavored collagen powder
3/4 cups fresh blueberries or bittersweet, dark chocolate chips
3/4 cup walnuts, chopped
1/4 cup unsweetened shredded coconut
INSTRUCTIONS:
Preheat oven to 350.
Grease 9x11 pan with coconut oil
In a large bowl, whisk oil, eggs, syrup, and vanilla.
Add in dry ingredients and mix well.
Fold in the optional add ins, if desired.
Pour in pan and bake for 25 minutes.
Allow to cool for 10-15. Cut into bars.
