Homemade Grain Free Granola

This is SO good and super easy to make!
I used to buy one from Costco, but it was a bit pricey. So, I created a copycat version of it. My family likes it even more!
I usually make a double batch, which lasts us about 2 weeks.

Grain Free Granola
INGREDIENTS:
1 cup almonds
1 cup pecans
1/4 pumpkin or sunflower seeds
1/4 cup unsweetened coconut flakes
1 tablespoon chia seeds
3 tablespoons coconut oil, softened
1/4 cup raw, local honey, or coconut sugar
1 teaspoon vanilla
1/8 teaspoon sea salt
1/2 teaspoon cinnamon
Optional add ins:
2 tablespoons goji berries
2 tablespoons of dark chocolate (65% or higher)
INSTRUCTIONS:
Preheat oven to 200 degrees.
Add almonds, pecans, and seeds in a food processor and pulse until roughly chopped. It’s ok if there are large bits and powder bits. (You can also chop by hand with a sharp knife or pulse one cup at a time in a high-powered blender)
Using a large bowl, add all of the ingredients and mix well.
Spread evenly over a large baking sheet. Bake 20-30 minutes until golden brown, stirring every 7 minutes to keep from burning.
OR dehydrate at 110 degrees for 14-18 hours, until moisture is out.
Allow to cool completely and store in the fridge in an airtight container.
You can eat this by itself, with your favorite milk, or on top of yogurt, oatmeal, or a smoothie bowl!
