Protein Packed Anytime Cookies

If a granola bar and a cookie had babies…it would be these! But better!

I call them Anytime Cookies because you can have them any time of the day…breakfast, snack, dessert.  (My kids call them “breakfast cookies”)

These are made with gluten free oats, no dairy, and no refined sugar. They are packed with 4 grams of protein each! They are also high in healthy fats (4 grams), and low in sugar (1-2 grams). *

My kids are accustomed to not having much sweetness in their food. So, with that being said, the sweetness factor is a bit low if you’re used to traditional cookies. You can adjust the amount of sweetener to your liking…just don’t go overboard!

This recipe is very versatile! The add ins are optional, and I would not recommend using them all in the same recipe. I usually add shredded coconut and raisins or dark chocolate chips. You can play around the ingredients; exclude and/or adjust to your preference. Just keep in mind that the consistency and nutrition facts will vary.

Anytime Cookies

INGREDIENTS:

  • 2 bananas, mashed

  • 1 1/2 cups oats (gluten free)

  • 1/2 cup nut flour (I use almond flour or Pamela’s nut blend)

  • 1/2 cup pure peanut butter (or any nut butter)*

  • 1 tablespoon ground flax seeds

  • 2 scoops unflavored collagen protein powder (optional, but may reduce protein content if omitted)

  • 2 teaspoons cinnamon

  • 1 tablespoon maple syrup or honey (optional)

  • 1 teaspoon baking powder

  • 1/8 teaspoon salt

Add ins: (about 1/8-1/4 cup each)

  • raisins

  • bittersweet chocolate chips (65% or higher)

  • chia seeds

  • sesame seeds

  • pumpkin seeds

  • shredded coconut

INSTRUCTIONS:

Preheat the oven 350 degrees. Line a cookie sheet with parchment paper. (Or use coconut oil to grease.)

Mix all the ingredients together in a large bowl. Batter will be thick and sticky.

Scoop about a tablespoon of batter on a prepared cookie sheet.

Bake for 10-12 minutes. Transfer to a wire rack to cool completely.


*Make sure your nut butter is just nuts and salt. Most have excess sugar and oils that negate any health benefits. ;)
